RECIPES
ABIGAIL'S DATE CAKE

Mix ingredients in the following order. Take one package of Wasa Rye crackers and grind into a fine powder. In a large bowl add 1 cup of wasa rye flower, ¼ cup ground flax seed, 1 cup xylitol, 1 cup dates fine chopped, 1 banana, 1 tsp. baking soda, 2 eggs, 1 cup hot water, and mix all together in a greased baking dish.

Bake in oven at 350 for approx. 20 min. (depends on thickness). You can also add walnuts and other spices like cinnamon. You can also make a cream frosting by mixing 4 tbs. of pure maple syrup ½ tsp. lime juice to 6-8 oz. of cream cheese.

PUMPKIN PIE

Take a whole pumpkin, peel and cut into chunks. Steam until soft, then strain out as much water as possible while mashing pumpkin. Add 4 cups of mashed pumpkin in a bowl with 8 eggs, 2 cans of condensed milk, 1 cup xylitol, 1 tsp. salt, approx 2 tsp. pumpkin pie spice mix or spice to taste, and mix together. Take and mix in blender until thoroughly mixed. Pre bake pie plate in oven at 425 for 5 min or until pie crust just starts to rise, then take from oven and pour in pumpkin mix until level with top of pie crust.

Bake at 425 for first 15 min. then turn temp. down to 360 for remainder of cooking time. (total time depends on oven and altitude, approx 45min. to 1 hr.) When you can put a knife in the pie and it comes out clean the pie is done.

Making the whip cream is simple. Just take a carton of heavy whipping cream, xylitol and a little vanilla extract, mix together. You can add more xylitol and continue whipping if you want it a little sweeter. After completely whipping let stand for approx 15 min. for all the xylitol crystal to dissolve. Perfect for the holidays!

HOT CHOCOLATE

1-1/2 cups rice or soy milk (no cow!)
2 Tblsp. really good cocoa powder unsweetened
(Ming prefers Ghiradelli or the cute little Dutch Boy, aka Droste's Cocoa)
2 Tblsp. Xylitol
4 drops or 1/8 tsp mint or orange extract (non-alcoholic)

With a beverage hand mixer or in a jar with a lid, mix/shake all the ingredients until well blended. Pour into a small saucepan and simmer on medium heat for five minutes. Pour into two small mugs. "Never serve it so hot that it hurts your tongue!"

MIXED NUT BRITTLE

Take 2 egg whites and beat until fluffy, add 1 cup xylitol and 1 tsp. pumpkin pie spice mix. Blend together in bowl and add a total of 5 cups of any of the following ingredients. Chopped walnuts, sliced almonds, chopped dates, raisins, unsweetened coconut, unsalted sunflower seeds, etc.. Mix together thoroughly and spread out on greased cookie sheet or baking paper approx. ¾ inch thick.

Bake in oven at 300 for approx. 20 min., if it stays in too long it will burn easy (need to watch). After a long cool down time it will harden up. Great Snack!

MULTIGRAIN PANCAKE

MIX:
½ cup regular oats ¼ cup Xylitol
2 cups 10 grain flour 2 tsp baking powder
½ cup whole wheat flour 1 ½ tsp salt
½ cup cornmeal 1 tsp baking soda
¼ cup wheat bran 1 ½ cups buttermilk pancake mix
¼ cup toasted wheat germ

COMBINE: 3 tbsp. vegetable oil and 2 egg whites: slightly beaten

Combine buttermilk, oil and egg whites; stir well, then add dry ingredients, mix until smooth. Batter will be slightly thick. Spoon about ¼ cup batter into a hot nonstick griddle or skillet coated with cooking spray. Turn when covered with bubbles and edges look cooked. Makes about 10 – 4 inch pancakes.

Peanut-Butter Cookies
1 cup peanut butter
1 egg
1 cup xylitol
1 cup of chopped walnuts

Mix everything together and drop by spoonfuls onto an un-greased cookie sheet. Bake at 350 for about 13 minutes, or until the tops are browned. Cool.

CHOCOLATE COOKIES
1 ½ cup xylitol
1 tsp baking soda
2 cups all-purpose flour
½ tsp salt
¾ cup unsweetened cocoa powder
1 cup semisweet chocolate chips

Combine flour, salt, and baking soda- stir well. Add additional dry ingredients. Whip 1 ¼ cup of butter or shortening until light and fluffy. Add 2 eggs and 1 tsp. vanilla and beat until mixed. Stir in the dry ingredients until well combined. Drop teaspoons of dough on a greased cookie sheet. Bake for 8 minutes at 350 degrees. Share with a friend.
